▫️Working from home ft. my vegan/plant-based lunch😋
▫️Roasted stir-fry veg blend, baked brown sugar sweet potatoes, and plant-based vegan meatballs
▫️These are pretty typical side dishes in our house and an easy go-to when it comes to nutritious and delicious food!
▫️For the veggies, I just toss in olive oil, creole seasoning, pepper, Lawry’s seasoned salt, and Lawry’s garlic salt
▫️For the potatoes, I wash and cut into cubes. I leave the skin because a lot of nutrients are contained within the skin. Then I toss in olive oil, salt, cinnamon, creole seasoning, and a little brown sugar.
▫️I bake them at the same time at 375-400 degrees and turn every 15 mins. Total bake time is usually around 40-45 mins.
