▫️Vegan Wild Rice Soup 🥣
▫️Made a little comfort food this weekend full of veggies to support healthy digestion and immunity☺️
-sauté onion 🧅 in 2 T olive oil for 2-3 minutes. Add in the garlic 🧄 and sauté for an additional 1-2 minutes.
-Add in 6 cups vegetable broth, chopped vegetables, and wild rice. I used chopped carrots 🥕, sweet potato 🍠, onion 🧅, and mushrooms 🍄. However, you can use any combination of vegetables you like 👍🏼
-Add seasonings! I used salt, pepper, basil, oregano, cayenne pepper, and 1 bay leaf 🍃(But you can customize the seasonings to your liking!)
-Cover and simmer about 45 minutes, until rice is fully cooked. Remove bay leaf.
-Add 1 14oz can of coconut milk and simmer an additional 5-10 minutes until thickened.
-*Tip: I like my wild rice soup a little thicker, so I mixed 1 T cornstarch with 2T water and slowly whisked it in at the end to thicken the soup. Personal preference!
