▫️Vegan Sticky Sesame Chickpeas😋😋😋 (mock sesame chicken)
▫️How can you get protein, vitamins and minerals, and fiber all in one? PLANTS ☺️💪🏼🥬
▫️This was sooo good, even my fiancé said so! Will definitely be making again SOON
-drain and rinse 2 cans chickpeas (garbanzo beans)
-mince 3 cloves garlic and sauté on medium heat in 2T extra-virgin olive oil for 2-3 mins
-In small bowl, combine 1T arrowroot powder & 2T veg broth. Set aside.
-to the sauté pan, add 1/3 cup soy or Tamari sauce, 1.5 T sesame oil, 3 T maple syrup, 2 tsp rice vinegar, 1/2 tsp ground ginger, and 2T veg broth. Whisk together.
-Add in arrowroot mixture. When bubbles start to form, add chickpeas and stir until they are coated. I also added steamed broccoli and served over brown rice & quinoa
