▫️Vegan Mac with chickpea pasta 🧀
▫️How do you get your protein with no meat or cheese? Simple! This chickpea pasta has 23g of protein in a 3.5 oz serving and 8g of fiber! (Or 14g for a 2oz serving, 5g fiber). Plus- the nutritional yeast adds 8g of protein per 1/4 cup! Plus – nutritional yeast is a complete protein 😉 I got mine at traderjoes 👍🏼 Love eating plant-based meals!
1️⃣Heat 2T olive oil in medium saucepan on medium heat. I added in 2 cloves of fresh minced garlic (*optional) and whisked in 3 T coconut flour to make a roux.
2️⃣ Slowly whisk in 1 can coconut milk and whatever seasonings you like! I used salt, pepp, and creole seasoning. Feel free to add some spice! Turn heat to low and let sauce thicken (about 8 mins).
3️⃣ Remove from heat and stir in 1/4 – 1/2 cup nutritional yeast. I also added in some fresh, steamed broccoli 🥦. You may taste and add any additional seasonings! Enjoy 😊
