Sweet potato Friday 🍠 Is that a thing?? This is my “sweet potato pizza” appetizer I made last night!
Fun fact: A sweet potato isn’t technically a potato, but a root vegetable. Sweet potatoes are rich in vitamin A, B vitamins, vitamin C & D, calcium, iron, magnesium, phosphorus, potassium, thiamin, and zinc. Not to mention, high in fiber (about 4g per 1 cup serving). And I love my fiber! Another fun fact: 95% of Americans do NOT meet their daily fiber needs (Source: American Journal of Lifestyle Medicine). So eat your fiber and reap the digestive benefits😍
Recipe for Sweet Potato Pizza 🍕
Preheat oven to 350 degrees F. Cut sweet potato in a 0.5 inch slices (or less – depending how thin you like it!). Spray the pan with non-stick spray. I brushed the potatoes with olive oil and fresh chopped garlic and seasoned with garlic salt. Bake for about 20-25 mins, turning halfway through. Add marinara, cheese, oregano, and any toppings you like and bake about 3 more minutes or until cheese is melted. Enjoy 🤗
