▫️Starting out Monday with a fresh, nutrient-packed salad! 🥗
▫️This salad has a spinach base (because every time I buy spinach, I promise myself I will eat it all before it goes bad – so I HAD to use it up 😂), red and yellow bell peppers, cucumber 🥒, sunflower seeds, chia seeds, roasted chickpeas, and avocado 🥑 with homemade balsamic vinaigrette dressing.
▫️Whenever I make salads, I make sure to include a healthy fat to facilitate vitamin absorption from the veggies. You need fat to absorb your fat-soluble vitamins (vitamin A, D, E, & K).
▫️I also like to include a protein source and chickpeas are one of my go-to plant sources of protein. And they are so versatile! These are roasted with sea salt 😋 Plus- they contain fiber! Try finding fiber in animal protein (that hasn’t gone through extensive processing) – bet you can’t!
