▫️Skinny Lasagna Roll-Ups 🍝
-2 cups marinara
– Lasagna noodles (You may sub zucchini slices if you’re looking to bring down the calories/carb content)
– 10oz package of frozen spinach, thawed (I used fresh spinach bc I couldn’t find frozen, so I just chopped it all up myself)
– 15 oz part skim ricotta cheese
– 1/2 cup Parmesan cheese
– 1 egg
– mozzarella cheese for the top
-salt & pepp
-Ladle about 1 cup marinara across bottom of 9×12 baking dish
-Cook noodles according to package.
-In bowl, combine spinach, ricotta, Parmesan, egg, 1/2 tsp salt, and black pepper.
-spread a little of the mixture across dried noodle (I dabbed with a paper towel) and roll up. Repeat with remaining noodles.
-cover top with remaining marinara and mozzarella and bake at 350 degrees F for 40 mins, covered with foil
▫️I served mine with a nice, fresh salad 🥗
