I like to center my meals around vegetables. This is a grilled sweet potato paired with roasted broccoli & cauliflower, butternut squash, and a grilled grass-fed steak. Talk about your fiber punch 👊🏼☺️ We definitely make the most of our grill in the summer and it’s a nice way to give the oven a break 😃
This meal contains lots of fiber, plant-based carbohydrates, vitamins, minerals, and protein & fat from the steak. I like to eat mostly vegetarian, but I do indulge in a steak every now and then, as well as other lean meats like chicken and turkey. It’s all about balance and what works for you and your body! My goal is to maximize the amount of nutrition I can get from my meals, support a healthy immune system, maintain a healthy gut, and provide fuel for my days – which are pretty active! I also aim to meet my protein needs every day because I am active and lift weights and need that protein to support repair and growth 💪🏼. Fun fact: Did you know that you actually need fat to facilitate vitamin absorption? Plant-based fats are best (avocado, olive oil, nuts, etc) for your overall health. Our fat-soluble vitamins – vitamin A, D, E, & K – need fat to transport the vitamins in our body so we can use them!
