▫️Pumpkin 🎃 Protein Bars
▫️Like I mentioned in my last post, pumpkin has a lot of nutritional benefits and I had leftover pumpkin to use up, so I put it to use!
-1 cup rolled oats
-1 cup vanilla protein powder
-1 tsp baking powder
-1 tsp baking soda
-1 Tbsp pumpkin pie spice
-1/4 cup honey (or maple syrup or brown sugar)
-1 cup canned pumpkin
-1/2 cup almond milk (or milk of choice)
-optional chocolate chips, nuts, chia seeds (I used chocolate chips and chia seeds)
-mix dry ingredients in smaller bowl. Mix wet ingredients in larger bowl. Add dry mixture to wet mixture and then stir in toppings last (chocolate chips, chia seeds, nuts)
-spray pan. bake at 350 degrees F for about 20 mins. Bars store best refrigerated👍🏼
-With 16 bars, each has about 60 calories and 5g protein.
