▫️”Lightened-up” chocolate chip cheesecake bars 🤤
▫️Nothing really fires me up like cheesecake and I was craving a treat this weekend😋
-5-6 full-sheet graham crackers. I used annieshomegrown organic graham crackers. Pulse in food processor until fine.
-combine with 2 T butter MELTED or coconut oil.
-using an 8×8 pan, lay parchment paper across the bottom to make pulling the bars out easy. Press graham cracker mixture into the bottom of pan and bake at 350 degrees F for 8-9 minutes.
-In bowl, with hand mixer, combine:
-8 oz reduced fat cream cheese (or vegan cream cheese)
-2 egg whites (or flax eggs for the vegan option)
-1/4 cup granulated sugar (or maple syrup)
-2T coconut flour
-Mix for 3 mins and then add:
-1 T fresh-squeezed lemon juice 🍋
-2 tsp vanilla extract
-Mix for 1 min. Then stir in 1/2 cup mini chocolate chips (or vegan chocolate chips) by hand.
-Pour mix on top of baked graham cracker crust and bake for 20 mins. Cover with foil and bake 5 more mins.
-Let bars cool at room temp at least 20 mins and refrigerate at least 3 hours.
-Finally, pull bars out of pan by using parchment paper, cut and serve 😊
