▫️Last night’s Taco Tuesday fajita bowls 🌮
-organic black beans
-organic brown rice and quinoa
-plain Greek yogurt used as sour cream
-sliced chix breast, onion, and bell peppers tossed in olive oil, seasoned with chili powder, cumin, salt, creole seasoning, and pepper. Bake at 400 for about 20 mins
▫️I’ve been trying to include more beans/legumes into my diet for the health benefits. Black beans are considered legumes and they’re high in fiber & protein 💪🏼 They contain potassium, calcium, magnesium, zinc, manganese, copper, quercetin (flavonoid), snd saponins.
▫️High-fiber diets have been linked to lower cholesterol, lower blood pressure, and better glycemic control (Am Journal of Clinical Nutrition)
