▫️Here’s my “use up the veggies in the house before they go bad” soup 🙂
▫️It also happens to be vegan 👍🏼
▫️-First, I warmed a little olive oil in a pot and added a chopped onion, chopped mushrooms, and minced garlic.
-I sautéed for a few minutes and then added 6 cups of vegetable broth.
-I added 1 chopped sweet potato, chopped celery, chopped carrots, and a whole-grain rice blend!
-I added 1 bay leaf, some oregano, salt and pepper, and creole seasoning for some spice.
-After about 45 mins on medium, I removed the bay leaf and I added 1 can of coconut milk and simmered an additional 5-10 mins!
-Season to your liking and serve 😊
▫️You can customize this recipe for whatever veggies you have to use up or use butter in place of oil, regular milk instead of coconut, etc!
