▫️Healthier cookies with protein and fiber💪🏼
▫️These cookies have less than half of the butter I normally use, 1/3 of the sugar, and less than half the flour I normally use, AND I swapped for whole-wheat flour!
▫️So how did I add in protein and fiber? Chickpeas and whole-wheat flour!
– 1 can garbanzo beans/chickpeas drained and rinsed
– 1 T vanilla extract
– 3 T melted butter or coconut oil
– 1/2 cup brown sugar or maple syrup
– 1/2 cup whole-wheat flour
– 1/2 tsp baking soda
– 1/2 tsp salt
– 1 tsp raw apple cider vinegar
– 1/2 cup choc chips
Add chickpeas and wet ingredients to food processor and process until fine. Since I used brown sugar instead of maple syrup, my batter was dry so I did have to add an egg to my batter.
Add wet ingredients to dry and mix with spoon. Add in choc chips. Spoon onto pan lined with parchment paper. Bake at 350 degrees for 18-20 mins.
