▫️Eat the rainbow 🌈
▫️Here I have are 1 egg + 3 egg whites scrambled with onion, topped with chia seeds & seasonings, with red, orange, and yellow bell peppers, 1/2 of a small avocado, and blueberries 😋
▫️I actually had the day off work so I was able to focus on some cardio today. So I’m refueling with a very simple, yet very powerful little meal this morning. Plant-based carbohydrates, plant-based monounsaturated fats, and protein from the eggs. Lots of antioxidants & vitamins. I’m not a huge fan of raw onion, but I love their anti-inflammatory properties so it was easy to scramble them into my eggs and still reap the benefits.
